There’s something undeniably charming about a miniaturised meal, particularly when it comes in the form of a tasty, palm-sized burger. This Sunday it’s time for a new interactive foodie experience stealing the spotlight right here at the Husky Pub!
Brioche Sliders are stepping up as the main act, and their stage is none other than the Waterfront Bar at The Huskisson Hotel, with unbeatable views of Jervis Bay setting the scene.
This Sunday 9 March, The Huskisson Hotel is rolling out its much-anticipated monthly Bottomless Brunch, from 12pm to 2pm, with unlimited brioche sliders and Long Island Iced Teas, $65 pp.

Behind The Scenes
We spoke with Executive Chef Anthony Telford who shared: “Our brioche is perfect for a juicy mini burger or a fancy bite-sized snack, lightly steamed and ready for our Bottomless Brunch this Sunday. This isn’t your average brunch; it’s an interactive flavour adventure where you build your own sliders, mix and match toppings and enjoy every bite.”
Anthony said a menu guide will be on hand to help navigate the choices, but creativity is encouraged. The brioche sliders are dairy-free yet still rich and pillowy soft. Please note, gluten free options are not available for this event.
The menu brings exciting combinations to the table: pulled beef with American cheese, slaw, and pickles; smoked salmon with red onion, capers, and cream cheese; and for the vegetarians falafel with hummus and pico de gallo (pronounced – pi-kow-deh -ga-yow) a fresh Spanish salsa bursting with tomatoes, onions, serrano peppers, lime, salt, and coriander.
Tables will be set with bowls of roasted peanuts in the shell, setting the tone for a laid-back, hands-on feast.
Small Buns, Big History: The Curious Origins of Sliders
Where did sliders come from? Many credit White Castle in Wichita, Kansas, the first fast-food burger chain, by founders Billy Ingram and cook Walt Anderson starting their slider invention in the 1920s. These mini burgers weren’t just about size, they were part of a dining experience. White Castle prided itself on a polished presentation, with employees in crisp white aprons and paper caps, serving up bite-sized burgers with a side of spectacle.
Brioche Evolution
If you’re wondering who to thank for this delicious treat, it’s the French. The name comes from the old French verb ‘brier’ which means ‘to work or break the dough’.
In the 17th century, French bakers would play around enriching dough with extra butter and eggs, creating brioche, a golden treat fit for aristocrats. Over time, it spread across France, with over 30 regional varieties. By the 19th century, it was the ultimate baker’s flex, crowned with its signature top-knot. Today, that indulgent spirit lives on in a miniature slider form, a perfect crowd-pleaser.
When it comes down to buns, rolls and sliders it’s not just about the filling but also the vessel that contains the fillings. The brioche bun was carefully chosen for this event, it holds well soaking up all that deliciousness, the slightly sweet flavour balances perfectly with the fillings.
If you can’t wait until Sunday, you will find on their menu prawn roll sliders with lettuce mayo and chives. We have seen these rolls come out and they certainly are generous with the prawns. A serve of three is $24 and you have the option ordering an extra roll for $8.00.
For all the slider enthusiasts out there, The Shoalhaven Food Network’s Battle of the Burger returns to Husky Sports on 15 June. Expect an eat-street atmosphere where the best burgers battle it out for the top spot based on your vote and a panel of judges.
Last year, a staggering 1,500 burgers were served, and the competition is set to be just as fierce this time around. Come along for your chance to taste, judge, and celebrate the finest sliders in town.
