When you hear “Margarita”, what’s the first thing you picture? A shaker about to pour pure summer into a glass. Salt in the air, the sun dropping low, with a mellow soundtrack of indie or tropical house drifting across the Bay.

It’s the kind of drink that slips straight into a barefoot beachside afternoon. Here in Huskisson on the shores of Jervis Bay, our local legends are marking International Margarita Day with their own spin on the world’s favourite cocktail. From zesty classics to adventurous savoury twists, the Margi has moved well beyond the salt rim. It’s playful, evolving, and exactly why we keep coming back for just one more.

A Sunny Day in a Glass

Did you know, the Spanish word for daisy is margarita. In the late 1800s, a Daisy was a popular sour cocktail made with spirit, citrus and a splash of soda. While it originally featured brandy or whiskey, the Tequila Daisy became a sensation during Prohibition as Americans flocked across the border into Mexico to drink legally. 

Whether it’s served in the classic inverted sombrero glass with its wide salted rim, a sturdy rocks glass over ice, or a sophisticated stemmed coupe or martini glass, tequila remains the ultimate spirit for this sunny day in a glass.

The Industrial Cool: Flamin’ Galah and The Nest

A quick turn into the Woollamia industrial estate brings you to Flamin’ Galah Brewing Co, a spot as colourful as its trademark Galah pink that has made a name for doing things with a creative twist.

Their Watermelon Margarita $22 is a total crowd pleaser, vibrant, refreshing and intentionally salt free to let the natural sweetness lead. It’s built on a base of Olmeca Altos Plata, an award-winning highland tequila prized for its smooth citrus finish, then shaken with triple sec, blackberry liqueur, fresh lime, and the refreshing juice of sweet watermelon.

For the purists, their Classic Margi $21 keeps it traditional with Jose Cuervo Especial Silver, a crisp and peppery tequila that provides that familiar, reliable kick. Make sure to catch their happy hours on weekdays (Wednesday to Friday) from 4pm to 6pm and Sundays from 3pm to 4pm.

Parked permanently on site, The Nest owners Adam and Tracey’s food truck is serving up proper brewery nosh designed for long, lazy sessions. Pair your margaritas with their Hot and Spicy Chilli Wings $15 if you’re chasing the heat, or the Sweet and Tangy BBQ Wings $15 for something smoky. The real showstopper is the NFC Chicken Sliders $23 for three, which feature signature fried chicken with slaw and cheese on soft sesame buns. Trust us, that chicken alone is worth the trip to the brewery including their Watermelon Margi.

The Local’s Hangout: Bud’s Tavern

Featuring el Jimador 100% Blue Agave

Over on Owen Street Huskisson, Bud’s Tavern is nostalgic in all the best ways and remains the ultimate place to be seen in Husky. Their signature Avocado Margarita $22 is a game changer, silky, fresh and made straight from the fruit. It’s a unique, surprisingly easy to love blend, using el Jimador, a 100% blue agave tequila.

You’ll also find the classics done right, or you can turn up the volume with a Spicy Marg $22 featuring el Jimador infused inhouse with fiery jalapeños. Catch the Spicy Margs for just $15 during Happy Hour from 4pm to 6pm daily.

Don’t skip the snacks here

Settle in with the Buttery Garlic Bread $11 dripping with confit garlic and herb butter. Add mozzarella and Parmesan to take it to gooey heaven territory for an extra $5.

Keep it coastal with their Prawn Roll $22 on a fresh Ramos Bakery hoagie with house made cocktail sauce.

Waterfront Vibes: Fishermens Wharf

Featuring Jose Cuervo and 1800 Reposado

Fishermens Wharf right on the waterfront in Huskisson is leaning into the tropical spirit all weekend long. For $30, you can score a duo of Spicy Fish Tacos paired with a specially crafted New Mexican Pineapple Margarita served on the rocks.

They rely on the perfect palate of Jose Cuervo, including 1800 Reposado for its smoky, mild spiced and smoother finish. This sunset-ready special runs from today, Friday 20 February to Sunday 22 February from 12pm to 3pm and 5pm to 8pm, making it the perfect excuse to soak up those iconic wharf views. Plus, their Friday happy hour from 4pm to 6pm is the ideal way to kick off your weekend margi celebration.

The Ultimate Coastal Pub: The Huskisson Hotel

Featuring Artisanal Mezcal and Premium Agave

The Huskisson Hotel is the quintessential beachside pub that simply oozes upbeat, coastal vibes. Their Margarita lineup $23 is designed for sunshine, featuring both the Classic Mezcal, using a smokier, artisanal style of agave spirit, and the Spicy Rosado, served beautifully on the rocks.

The kitchen has curated the perfect pairings to match the agave’s bite, starting with zesty Guacamole and Corn Chips served with Chilean Pebre, a fresh spicy salsa $14.

If you’ve got a real appetite, follow up with the Spicy Calabrese Pizza $25 topped with hot sopressa and fiery nduja.

Settling in for the long haul? Grab a mate and share the massive Smoker Meat Platter $56, a feast of house smoked brisket, jerk chicken and corn ribs that comes with slider buns to soak up all those smoky flavours. Perch yourself on the covered veranda for their Happy Hours, running Friday and Saturday from 7pm to 9pm.
