Sandbar Restaurant is hosting a long table event that will be pungent with smoky, spicy aromas of churrasco – Brazilian BBQ – on Saturday 30 November and Chef Jason Wilkinson has told Jervis Bay Weekend Magazine what diners can expect from this special event.
Jason loves creating events where he can dive into the spice shelf, and Brazilian BBQ is definitely one such occasion.
He say, “I’ve chosen a Brazilian BBQ as the kitchen at Sandbar has an amazing open flame grill, which is going to create a level of authenticity that I’ve struggled with in other kitchens.”
The sizzling, succulent meats will be on shared platters, with bold spices and unmistakable flavours of the grill. Jason shared his passion for this style of food:
“For me as a chef, cooking with spices is something I find hard to put into words… being able to develop and nurture the flavours and aromas of spices is something I learnt very early in my career and I was fortunate enough to work alongside some amazing chefs in my first 10 years that really drilled the basic philosophy of spice cooking into me.
“These days I find roasting spices somewhat calming as it’s one of the few times I refuse to multitask so that I can give my full attention to the spice so that I can make sure it’s just right, otherwise… 5 seconds to long and the whole dish will be ruined… 10 seconds to short and it will be underwhelming.”
We know Jason’s expertise and precision will come through on the plate!
Then the drinks to fire up your evening celebração, “feast” in Portuguese, Jason is pairing jugs of sangria and caipirinhas – Brazil’s classic cachaça cocktail rum, sugarcane juice and lime. Jason chose these two special thirst quenchers to ensure guests can cool their lips as needed.
And, of course, there’s the atmosphere that Sandbar is becoming famous for – from their comedy nights to their Oktoberfest celebrations, the restaurant is at its best on a long-table special event.
Jason says the evening will be as much as social experience as a flavour journey. “And I feel like November is the perfect time to put on an evening of communal dining with a selection of mouthwatering fire roasted meats (and a vego option) that will (hopefully) bring people as much excitement eating as I get to have cooking it!”
For $60pp, this night will be a nod to Brazilian culture of connection, sharing delicious meals, celebrating life together with laughter and music.
